补充资料：晁衡鱿鱼
原料
鲜鱿鱼400克，醋40克，料酒25克，盐3克，味精2克，胡椒粉2克，汤50克，水淀粉25克，油500克（约耗50克），干辣椒丝3克，葱姜丝各3克。
制法：
1.把鲜鱿鱼洗净去皮、膜后一切两开。在鱼身里侧剞荔枝花刀后，改成5厘米大的方块，放沸水锅里焯一下，捞出待用。
2.碗对芡汁：醋、料酒、盐、味精、胡椒粉、汤、水淀粉。
3.勺放油烧至八成热，放入鱿鱼卷急炒一下，捞出控干油。
4.勺留少许油，放入干辣椒丝、葱姜丝炝锅，放入鱿鱼卷，烹入芡汁，颠勺，快速翻炒均匀，装盘上桌即成。
