补充资料:晁衡鱿鱼

原料

鲜鱿鱼400克,醋40克,料酒25克,盐3克,味精2克,胡椒粉2克,汤50克,水淀粉25克,油500克(约耗50克),干辣椒丝3克,葱姜丝各3克。

制法:

1.把鲜鱿鱼洗净去皮、膜后一切两开。在鱼身里侧剞荔枝花刀后,改成5厘米大的方块,放沸水锅里焯一下,捞出待用。

2.碗对芡汁:醋、料酒、盐、味精、胡椒粉、汤、水淀粉。

3.勺放油烧至八成热,放入鱿鱼卷急炒一下,捞出控干油。

4.勺留少许油,放入干辣椒丝、葱姜丝炝锅,放入鱿鱼卷,烹入芡汁,颠勺,快速翻炒均匀,装盘上桌即成。
