补充资料:金银鲳鱼
主料: 鲳鱼1条600克,青椒50克,蒜片20克,鸡蛋清半只,洋葱末50克
配料: 胡椒粉0.5克,辣酱油50克,绍酒20克,精盐1.5克,味精1克,干淀粉40克,湿淀粉20克,色拉油500克(实耗75克)。
做法: 1、将洗净的鲳鱼平放砧板上,在鱼划鳍处横切一刀至龙骨,去出一片的鱼片去胸骨,再改成鱼片,用精盐、味精、绍酒、蛋清、淀粉上浆。
2、将另一片带头、带尾的鱼在鱼肉一边剞上十字花刀,用绍酒、精盐、辣酱油、洋葱末腌渍入味,拍上干淀粉。青椒去籽,切成块。
3、锅上火放少许油烧热至180度时,放入带头尾的鱼,肉面朝下煎至断生,待香味溢出、炸至金黄时出锅装入盘中(肉面在下)。
4、锅复上火,放油烧至105度,放入鱼片,划油,断生捞出,锅留油放入蒜片、青椒、鲜汤、绍酒、精盐、味精、湿淀粉,勾芡倒入鱼片,淋明油翻锅,装入煎好的鱼片上面,撒上胡椒粉即成。
特点: 鱼肉一面色金黄鲜香,一面洁白色滑嫩,一鱼两吃,别具风味。
