| 胡椒 Piper nigrum；pepper 胡椒科胡椒属多年生木质藤本植物。原产印度。世界有近20个国家种植，主产国是印度、印度尼西亚和马来西亚。中国于1951年和1954年分别从马来西亚和印度尼西亚引入海南试种，主产地为海南岛和湛江地区。胡椒茎攀援生长，长7～10米，节膨大有吸根。生长要求年降水量1500～2000毫米和较高气温，适于排水良好、深厚疏松，pH5.5～7.0的土壤。枝蔓纤弱，宜静风环境。1龄植株需轻度荫蔽，结果植株需充足光照。扦插繁殖，从1～3年植株取插条，发新根后定植，斜插，株行距2米×2米。植后蔽荫。主蔓长出后，将其缚在2米高支柱上。苗高1.2米时剪蔓，剪3～4次，留4～6条蔓，培育成圆筒状株形。株高控制在2.5米左右。幼龄期施氮肥，结果植株加施钾肥。注意排水、盖草、培土。病虫害有胡椒瘟、叶斑病、花叶病和根瘤线虫。介壳虫、蚜虫。胡椒为香辛作物。经济寿命20～30年，种后3～4年便有收获。每穗有3～5粒果实变红时为适收期。种子为主产品，含胡椒碱和挥发油。可作调味剂和食品防腐剂，入药健胃利尿。
