果胶质(c6h16o5)n是构成高等植物细胞质的物质并使相邻近的细胞壁相连。天然的果胶质又称为原果胶。天然果胶质的主要组成是由d-半乳糖醛酸以d-1.4糖苷键相连形成的直链高分子化合物，其中大部分羧基已形成甲基酯，而不含甲基酯的称为果胶酸。
茶叶中含有一定量的果胶质。果胶质是构成茶叶细胞间层质的主要物质，是一种无定形的胶质，具强亲水性，粘着而柔软，即可使相邻细胞粘连在一起。在茶叶揉捻过程中，细胞破碎，果胶质亦相随而出。
