The involved microbes,catalytic mechanism and fermentation conditions in the bioconversion of fatty acids as natural substrates are systematically demonstrated in this paper,especially those involved in the production of ω-1、ω-2 and ω-3-hydroxy fatty acids with cytochrome P450 system.
