主料:日式豆腐、西兰花
配料:猪肉粒、水发冬菇粒、洋葱粒、辣椒粒
调料:泰国鸡酱、精盐、料酒、水淀粉、胡椒粉、生粉、味精
[制作流程]
制作:
1.将日式豆腐切成小段,中间掏洞,放入配菜盘里,西兰花切成小朵,放入盘里待用
2.将肉粒、冬菇粒、洋葱粒、辣椒粒入碗,加调味料拌成馅料,放入挖好的豆腐内制成生坯待用;
3.将生坯上笼蒸10分钟取出装盘。西兰花用开水加调料焯熟围边
4.淋上事先调姝酸辣汁,即可上席
特别关照:挖豆腐时必须选用专业工具,否则影响成品外观。酸辣汁的做法很简单,将绿芥末秋醋调匀即可。
