绿球鳝鱼汤
原 料：活鳝鱼1条，鲩鱼肉、熟鸡胸脯肉丝各200克，木耳丝（水发）、绿菜叶丝、熟火腿丝各30克，蛋皮丝100克，鳝鱼清汤2000毫升，料酒、葱汁、姜汁、食盐、蛋清、淀粉、植物油、胡椒粉各适量。
做 法：
1.鳝鱼宰杀，用清水洗干净，与鲩鱼肉分别剁成蓉，加料酒、葱汁、姜汁、食盐、蛋清、淀粉，搅匀，待用；
2.将熟火腿丝、熟鸡胸脯肉丝、木耳丝、蛋皮丝、绿菜叶丝混合在一起，放入盘中铺散，用手将鳝鱼蓉挤成球状，入盘中，混合以上各种丝，如此依次做完；
3.取大盘1个，抹上一层油，将滚上各种丝的鱼球逐个放入盘中，上笼蒸熟，取出放入大汤碗中；
4.锅内放入鳝鱼清汤，烧沸后加入食盐，用湿淀粉勾稀芡，倒入大汤碗中，撒上胡椒粉即成。
功效：
补肾祛风，荣发旺眉，怡神悦容。适用于肾阴亏虚、虚风上扰而致脱发脱眉、发眉稀疏或枯黄而干、头晕耳鸣、腰膝无力、两眼干涩等。
