乐昌白毛尖(Lechang baimaojian) 条形炒青绿茶之一。产于广东乐昌县沿溪山九峰山一带,茶为中叶种制成。成茶满披银白色茸毛而得名。 制法分杀青、揉捻、干燥三个工序。上午采叶,下午拣选,分开老嫩,分别加工。杀青时锅温180-200℃,每锅投叶量500-600g,时间5-7分钟。杀青叶出锅后,用双手团揉,俗称“狮子滚球”。揉后炒二青,锅温140-150℃,炒10-15分钟,二青叶出锅摊放2分钟后,再进行第二次揉捻(10-15分钟);第三次炒青锅温80-100℃,炒15-20分钟,起锅后再次揉捻,然后辉锅至毛茸显露即可,稍摊晾。复干方法有两种:一种是用炭火烘焙,火温控制60-70℃(烘至足干);另一种是棉纸摊于锅上再将茶叶薄摊在纸上,锅温50-60℃,焙至茶条干脆为度。 |
