【原料】

乌龟蛋150克,香菜末2克,胡椒粉2克,葱末、姜末各2克,盐2克,料酒10克,味精10克,醋50克,大油50克,香油5克,水淀粉60克,高汤适量。

【制作过程】

(1)乌龟蛋用水煮开,换水再煮,煮几次后剥成片再煮,捞出。(2)将乌龟蛋、香菜放盘中,加盐、味精、料酒、葱丝、姜丝,拌和均匀。(3)锅上火,加入高汤,烧开后勾玻璃芡,将拌好的乌龟蛋倒入芡汤锅中,烧开后,淋香油,撒胡椒粉既成。香菜、胡椒粉亦可不入锅,上桌时装味碟备用。
