流行于宁夏卫宁平原汉族民间的一种面食。古时中卫、中宁两县佛教盛行，民间居士及信仰佛教只吃素食的人比较多，由此而有了这一传统面食。曾流传有这样一首歌谣：长脖子雁扯红线，一扯扯到中宁县，中宁县的丫头会擀面；擀得薄，切得细，下到锅里团团转，舀到碗里一根线，……”。
制作方法是：面粉里掺入少许当地野生植物蒿草籽研磨成的粉，和面的水中加一点当地发酵面粉时使用的碱精粉，将面和好后反复醒揉多次，擀成直径一米左右的极薄的面张，待煮面时将大张面折扇式的叠好，用刀切得细如粉丝一般后放开水锅里煮熟捞出，将豆腐、黄花菜等多种蔬菜切丁制作出的汤菜调入面碗里即可食用。现在以羊肉或大肉都可切丁制作汤菜调食。
