卷曲形炒青绿茶之一。产于江苏省太湖洞庭山。约在一千年以前的宋代,这里已是著名的茶叶产地。碧螺春是清圣祖玄烨游太湖时(康熙14年,公元1675年)题名的。其外形纤细、卷曲呈螺状,白毫显露,银绿稳翠。主销北京、上海、苏州一带大中城市,并出口东南亚等地。
洞庭碧螺春鲜叶于每年3月下旬开采,高级茶以单芽或一芽一叶初展为采摘标准。炒制方法分为杀青、揉捻、搓团、干燥四个工序,连续在锅中操作,一锅到底。杀青每锅投叶量为500-600g,锅温150-160℃,经2-3分钟,当达到杀青适度时,将锅温降到80℃左右,用手拢住叶子沿锅壁摩擦旋转进行揉捻。揉捻时叶子旋转方向必须始终一致,才能揉紧茶条。约15-17分钟,七成干左右,再降低锅温,进行搓团。搓团是碧螺春外形形成的关键工序,锅温60-70℃,将一锅叶子搓成两团,边搓团边解块,两团交替,反复进行,待九成干时出锅。茶叶出锅后,在锅底衬以白纸,再把茶叶均匀摊于纸上焙干。一天后,再用炭火烘至足干,装箱收用。
