原料
[面粉][糖桂花][红糖][小苏打]
糖鼓盖鼓起如盖而得名，肉质柔软，表皮焦脆，味道香甜可口，热食最佳。
制作方法
将面粉掺入小苏打，用温水和成面团，盖上湿布，饧15分钟，然后把少许面粉与红糖、糖桂花一起拌成馅；将饧好的面团搓成圆条，摘剂，按成直径二寸半的圆皮放上红糖馅，包成桃形，然后略微按扁；用花擀面杖横竖各擀一下，擀成直径约三寸的圆饼；将圆饼放在旺火烧热的饼铛上烙，两面稍一变色，即放入烤炉中，烘烤四五分钟，待饼鼓起、呈浅黄色时取出即成。
