①原料选择及处理：将新鲜甘薯茎尖除去虫斑叶及枯黄、破损叶，裁剪均整、沥干，在0.2％的na2so3护色液中浸泡18-24小时，清水中漂洗至叶面无粘滑感后装罐，注入80-90℃的罐液。②排气、封罐：装罐后80℃条件下排气10分钟然后封罐。③杀菌、冷却：115℃条件下杀菌3分钟，快速冷却至40℃以下，杀菌公式为5-3-5分钟/115℃。④检验、包装：将破罐、胀罐剔除后，抽样进行感官、理化及微生物指标检验。
