主料
净鸡胸肉6两（约240克），西芹2两（约80克），川椒、绍酒各1/2茶匙，葱1条，盐、糖各少许。
配料
腌料：鱼露1茶匙，老抽、糖各1/2茶匙，生粉1茶匙，胡椒粉、麻油各少许。
做法
1、鸡肉切片，用刀拍松，用腌料拌腌二十分钟，泡油，约三分钟至九成熟。
2、起锅，落油少许，将切段的西芹加少许盐、糖炒熟，作围边用。
3、川椒洗净，放白镬中炒香后倒在白纸内包好，用面棍碾碎成末；葱切碎，油锅中炒香；两者混合拌匀。
4、烧热锅，落油一汤匙，爆香川椒末，洒入酒，鸡肉回锅，用猛火快手兜炒约一分钟，取出摆放碟中。
