基本材料
菜花250克,香菇15克,鸡油10克,鸡汤100毫升,花生油、精盐、味精、葱、生姜、淀粉各适量。
简介
中医学认为脾胃功能正常与否影响寿命,脾胃健则体健寿长,脾胃衰则羸弱病夭。
脾胃居中焦,为后天之本,是受纳、腐熟、运化水谷精微、化生气血的器官。脾胃功能正常,消化有力,水谷精微运行正常,气血化生充足,机体得以滋养,则正常生长发育,健康长寿;脾胃功能失常,消化无力,水谷精微失运,气血化生无源,机体得不到滋养,则生长缓慢,发育不良,进而羸弱而病夭。可见调补脾胃是抗衰防老,延年益寿的重要环节。
脾胃功能受损多与饮食不当、劳倦思虑过度有关。饮食调补应做到:1.饮食有节,定时定量,细嚼慢咽,不暴饮暴食,应“先饥而食,食而勿令饮,先渴而饮,饮勿令过。食欲数而少,不欲顿而多”。2.不食过于寒凉或辛辣燥热炙 之品。3.五味俱进,粗精、荤素搭配,不偏食,即不过于清淡粗劣,亦不宜常食肥甘厚味。4.常食健脾养胃的食物,如山药、莲子、大豆、谷物、扁豆、薏苡仁、山楂、香蕉、大枣、板栗及猪瘦肉、牛肉、鸡肉、牛奶、豆制品等。补益脾胃的中草药有人参、茯苓、黄芪、白术、甘草等,与食物配制成药膳效果更佳。
制法
菜花择洗干净,切成小块,放入沸水锅内焯一下捞出;香菇用温水泡发,去蒂洗净。炒锅上火,放花生油烧热,下葱、姜煸出香味,加鸡汤、精盐、味精,烧开后捞出葱、姜不要,放入香菇、菜花,用小火稍煨入味后,用水淀粉勾芡,淋上鸡油,盛入盘内即可食用。
功效
益气健胃,补虚强身。
用法
佐餐食用。
应用
适用于食欲不振,吐泻乏力等症,也可防治佝偻病。
