〖做法〗
1．把青蟹洗净，对切成块，拍上淀粉。
2．起油锅，烧至六成热时，放入蟹块，炸至金黄色捞出。
3．锅中留少许油，倒入咸蛋黄、青蟹，加入盐、味精、黄酒、生姜、葱一起翻炒，直至咸蛋黄裹在蟹块上。
