原 料：
鸡腿肉500克，姜片8克，葱段15克，精盐6克，味精1克，花椒4克，糖色30克，鸡汤200克，绍酒20克，香糟汁15克，干辣椒20克，红油辣椒15克，色拉油500克（耗约100克）。
制法: （1）鸡腿肉洗净，切成2厘米见方的丁，放入碗内，加精盐（4克）、姜片、葱段、绍酒（10克）拌匀，腌渍15分钟。干辣椒切成1厘米长的段。
（2）炒锅置旺火上，加入色拉油烧至八成熟，下鸡丁炸成浅黄色，捞出沥油。
（3）炒锅复置旺火上，加入色拉油烧至五成热，下干辣椒段炸成浅棕红色，下花椒继续炸至油呈棕红色。倒入鸡汤、绍酒（10克）、糖色、香醋汁、加精盐（2克）至亮油。加入鸡丁、味精、红油辣椒、晾凉后装盘即成。
特点: 色泽红亮，麻辣不燥，鸡丁干香滋润。
