主料
核桃肉2两(约80克),墨鱼1只重约15两(约600克),饼干8块,蛋1只。
配料
调味料:生粉1汤匙,盐1/2茶匙,蛋白少许。`
做法
1、将墨鱼撕去外衣,冲洗干净,切片,用搅拌机搅成肉浆加入调味料搅成墨鱼胶,放入冰箱冷藏约1小时备用。
2、核桃肉汆水后沥干备用。
3、每片饼干涂上墨鱼胶,上放三粒核桃肉,将涂有墨鱼胶的一面向下放入油镬中炸至金黄色,沥干油分便可上碟。
备注
心得:核桃肉必须汆水,以去其油腻味。
