【特点】 汤汁醇厚,鸭肉酥烂脱骨,淡菜鲜美。
【原料】
光鸭一只(重约2500克)。 鸡肉100克、肥膘50克、熟火腿15克。葱30克、姜20克、味精4克、精盐15克、绍酒40克。
【制作过程】
光鸭从脊背开刀,取出内脏,洗净,放入水锅中出水至断血,捞出洗净。贡淡用水泡软后剪去内毛或老肉,洗净待用。鸡肉与肥膘一同切成细米粒状,放入葱姜末,再加精盐、绍酒、蛋清拌成糊状,嵌在贡淡上待用。将鸭子放入砂锅(脯朝上),加精盐、绍酒、葱姜、贡淡、原鸭汤,加盖烧沸后移至小火炖至酥烂,食时加入火腿片稍炖即成。
