①原料选择及处理:将新鲜甘薯茎尖除去虫斑叶及枯黄、破损叶,裁剪均整、沥干,在0.2%的na2so3护色液中浸泡18-24小时,清水中漂洗至叶面无粘滑感后装罐,注入80-90℃的罐液。②排气、封罐:装罐后80℃条件下排气10分钟然后封罐。③杀菌、冷却:115℃条件下杀菌3分钟,快速冷却至40℃以下,杀菌公式为5-3-5分钟/115℃。④检验、包装:将破罐、胀罐剔除后,抽样进行感官、理化及微生物指标检验。
