主料
鸡脚12只,排骨12两(约480克)斩件,莲子2两(约80克),百合、淮山、芡实各1两(约40克),玉竹1/2两(约20克),姜1片,红枣6粒(去核),盐适量。
做法
1、淮山、芡实,玉竹洗净。
2、百合、莲子分别用清水浸40分钟。莲子去莲心,与百合分别放入滚水中煮5分钟,取出洗一下。
3、鸡脚、排骨洗净,放入滚水中煮5分钟,取出洗净。
4、水12杯(或适量)煲滚,放入鸡脚、排骨、红枣、姜、玉竹、淮山及芡实,煲滚后,然后调慢火煲2小时,下百合、莲子再煲1小时,下盐调味。汤料盛碟上,汤盛汤碗内同上桌。
