【原料】
偏口鱼750克。 火腿10克、水发冬菇20克、净冬笋20克、熟鸡肉25克。精盐5克、绍酒15克、芝麻油10克、面粉10克、发酵粉5克、花生油250克、鸡蛋黄25克。
【制作过程】
将偏口鱼肉洗净,劈成长5厘米、宽3厘米、厚0.3厘米的片,共12片。每片平铺案板上撒上精盐、绍酒腌渍。冬菇、冬笋、火腿、熟鸡肉切成长3.5厘米的细丝放入碗内,加精盐、绍酒、芝麻油拌匀成馅料,待用。鸡蛋打入碗内加面粉、发酵粉、清水,调成鸡蛋糊。把馅料分别均匀地包在鱼片肉内,卷成12个长3厘米、直径1厘米的鱼卷。炒锅内加花生油,中火烧至六成热(约150℃)时,将鱼卷沾匀鸡蛋糊,入油炸至熟透成金黄色时捞出,摆在盘中即成。外带花椒盐碟一并上席。
