特点
大良虫崩虫少——同样有相当知名度,与盲公饼、西樵大饼一起可称三大佛山“手信”特产为面粉拌和猪油、南乳、白糖等配料油炸而成的食品,形似金黄色蝴蝶,顺德人俗称蝴蝶为虫崩虫少,故名。始制于清乾隆年间县城东门外的成记老铺,初为脆硬薄片,后来经李禧记改进,风味甘香酥化,咸甜适度,品种有蚝油、虾蓉、榄仁、南乳等。现时制作的多为南乳虫崩虫少。制法以普通面粉为主料(精面因筋强,炸后不松化,不适用),和入南乳、油、糖、水,比例是:面粉500克,南乳32克.花生油16克,白糖172克,碱水半汤匙,精盐7.8克,臭粉0.3克,食粉0.6克,清水78克,搓扭成面团后,切块捏压成形,再放入花生油锅中慢火. 虽然虫崩虫少只是一种不起眼的小吃,但如今已成为当地人饮食文化中一个永不磨灭的亮点,而到顺德吃崩砂,很多人会毫不犹豫地首选“李禧记”。
