主料
鳟鱼12两(约480克),西芹、甘笋各2两(约80克),葱2条,金菇1束,蒜头1瓣,柠檬1片(挤汁),牛油1汤匙,上汤3杯,盐1/2茶匙,胡椒粉少许。
配料
调味料:盐1/4茶匙,胡椒粉少许。
做法
1、鳟鱼切大件,洗净抹干,加调味料拌匀。
2、西芹去筋,甘笋去皮,分别切5厘米长条;葱切段;金菇切去要部,洗净;蒜头去衣,拍扁。
3、煮热牛油,下蒜炒至香,去掉蒜头,排入鳟鱼块,煎至两面焦黄色,取出。
4、原锅放入西芹、葱段,炒匀,注入上汤,下鳟鱼,煮至滚,挤下柠檬汁,上盖焗煮约7分钟,下盐、胡椒粉调味,加入金菇再煮3分钟即成。
