黄牛鞭1根（约750克），白菜苞20个，竹荪50克，枸杞5克，花生油100克，盐、味精适量，糖10克，红葡萄酒50克，番茄酱50克，辣椒油25克，香油5克，姜20克，葱25克，肉桂5克，八角5克，草果3克，白蔻3克，干红椒50克，湿淀粉25克。
【制作过程】
1、牛鞭下冷水锅煮2小时，剖开刮洗干净，切6厘米长，1.5厘米粗的条，再入冷水锅烧开捞出。菜心洗净，竹荪水发，枸杞泡发。葱姜洗净拍破。 2、锅内放油，下番茄酱、姜、葱、肉桂、干红椒、八角、草果、白蔻煸炒，再下入牛鞭，烹红葡萄酒，放盐、味精、白糖，用砂锅加清水煨烂，拣出葱、姜、肉桂、八角等香料。 3、菜苞炒熟入味，竹荪切5厘米长的段氽水。牛鞭倒入炒锅收浓汤汁，勾芡，淋辣椒油和香油，装入盘中，撒枸杞、葱段即可。
