干烧雅鱼
干烧雅鱼是用四川雅安特产雅鱼和猪肉炸、烧制而成。为宫廷宴席菜中的珍品。成菜色泽金黄带红光亮，鱼肉紧密细嫩，味道鲜香微辣。
雅鱼属雅安名特产之一，是中亚高原山区特有的品种，又称“丙穴鱼”。产于青衣江（雅安段）周公河，故称雅鱼。鱼形似鲤而鳞细如鳟，体形肥大，肉质细嫩，沙锅雅鱼为当地名菜。相传，清代上贡慈禧，太后赞美为“龙凤之肉”。干烧法为四川厨师所独创，乃以多量鲜肉汤加味料，将鱼烧至汁干入味，四川烹饪界称此为“自来芡”、“自然收汁”。
选雅鱼一尾，去鳞剖腹取内脏，洗净，鱼身两面剞刀，遍抹绍酒、精盐，入油锅炸至皮皱后捞出。锅换冷油，逐渐加温煸炒泡辣椒、剁细的豆瓣、姜蒜颗，至出香味即渗鲜汤烧至味香，打去味料渣。将鱼和炒酥的猪肉丁、盐、醪糟汁、白糖、醋入锅同烧，待汤沸后移至小火慢烧，至汁稠鱼入味即成。 干烧雅鱼
