产地:中国贵州思南。
工艺:原料采用本县大河坝区温家坡、孙家坝区沙子坎与城关镇白虎岩所产优质花香瓜。先用绒帕拭净瓜皮,切为两半,挖去瓤籽,置石灰水中浸泡10余小时,再人工挤压,去掉苦水,洗净、晾于备用。自制优质甜麦酱,与瓜坯按一定比例腌制,每隔一昼夜取出,去旧酱,易新酱再腌,如此反复换缸换酱3次,后入坛装罐,顶面覆以特制高级麦酱,密封存放约100天左右后即得成品。
特点:其色棕褐,质地清脆,细嫩爽口,咸甜适度,酱香与脂香浓郁,具有甜、咸、脆、鲜、香的特殊风味。
