做法
用鲤鱼一尾,由尾部顺鱼脊刺下刀,将鱼片成两扇,再在鱼肉上剞上麦穗花刀,放在盘内,撒上精盐,淋上料酒喂好,再涂上一层淀粉,提取鱼尾,抖开麦穗。用七成热的油进行旺火炸鱼呈深黄色取出,鱼头鱼尾对齐,把原料摆在和盘内。将油、醋、糖、料酒、松子、口蘑、青豆、鲜汤、湿淀粉、葱、姜、蒜末放在碗内调成汁。用油勺放在旺火上烧热,将兑好的汁倒入搅拌一下,加明油炒成油汁,浇在炸好的鱼上即成。
