[操作程序]
1．乳牛肝菌洗去泥沙，放在开水中烫一下取出，滤干水分。豆瓣酱斩成末。
2．锅中放油，烧热后放入肉末炒散，加入豆瓣辣酱、葱末(一半)、姜末、蒜末，炒香，再放入乳牛肝菌煸炒，然后加入酒、酒酿、酱油、盐、味精、鸡精、清汤，烧1—2分钟后勾芡，撒上余下的葱花，滴上明油装盘。
[特色点评] 口味滑嫩、鲜香，略带辣味。乳牛肝菌是野山菌类的上品，是一种无污染的健康绿色食品。
[要领提示] 因为是鲜味较浓的菌类，所以辣味不能太重。
