性质:催化水解β-葡聚糖的多种酶的总称。按其作用方式不同,可分为内切型和外切型。前者存在于谷物种子、某些真菌和某些细菌中,能催化水解谷物细胞壁中的β-葡聚糖,其中包括内切型β-1,4-葡聚糖酶、内切型β-1,3-葡聚糖酶。后者存在于谷物种子中,其中又包括外切型β-1,4-葡聚糖酶、外切型β-1,3-葡聚糖酶。在工业上采用细菌(如枯草芽孢杆菌)、曲霉(如黑曲霉)、青霉(如伊氏青霉)生产。在啤酒生产原料大麦及其麦芽中,含本品较多。在啤酒生产中采用β-葡聚糖酶,可提高麦汁的过滤速度和得率,从而保证啤酒质量。也可用于饴糖、麦芽糖浆生产和用作饲料添加剂。
