原料：
甲鱼1只(约400克) 五花肉200克 红枣、桂圆肉各50克 熟鹌鹑蛋10个 葱结、姜片、精盐、料酒、色拉油各适量
制法：
1.甲鱼宰杀后治净；五花肉治净切成块。
2.取一汤盆掺入清水，放入治净的甲鱼、桂圆肉、红枣、葱结、姜片、鹌鹑蛋和五花肉块，调入精盐、料酒，上笼用旺火蒸至烂时取出，拣去葱结、姜片，淋入烧热的色拉油，即成。
特点：
汤鲜味美，肉软糯，微甜可口。
甲鱼具有滋阴凉血，平肝息风等功效。夏日喝此汤，对身体虚弱、食欲不振、营养不良者，有较好的滋补作用。
