◆ 菜谱配料：
黄鱼1条（约1000克），食用油2000克，番茄酱50克，蜜桔2个，桂圆8个，糖水菠萝100克，白糖100克，红樱桃10粒，苹果肉50克，鸡蛋2个，湿淀粉50克，生姜、葱各15克，绍酒20克，精盐、味精少许，果汁200克。
◆ 制作过程：
1、将黄鱼去鳞，用筷子从鱼口至腹中搅出内脏，洗净，从头部向尾部斜刀剞7刀，另一面同法剞好。用葱姜、绍酒、精盐、味精挤成葱姜味汁，将鱼腌渍入味。鸡蛋、湿淀粉搅成糊。
2、炒锅上火放油至7成热时，将黄鱼均匀地抹上蛋糊，入油锅炸至成形，再用小火炸透。炸鱼的同时另用炒锅上火，把番茄酱略炒后，加入果汁、糖、蜜桔、菠萝、桂圆、苹果肉、樱桃，烧开后勾芡，淋明油，浇到鱼身上即成。
