性质:由肉豆蔻科植物肉豆蔻(Myristica fragrans Houtt.)果仁压榨除去固定油后的榨饼经水蒸气蒸馏得到。为无色至黄色液体。有东印度种和西印度种两类。具辛香,带萜烯味。东印度种油相对密度0.880~0.910。折射率1.474~1.488。旋光度+8 ~+30 (25℃)。西印度种油相对密度0.854~0.880。折射率1.469~1.476。旋光度+25 ~+45 (25℃)。主成分为α-和β-蒎烯、桧烯、宁烯、γ-松油烯、肉豆蔻醚等。主产于东、西印度群岛。主要用于肉类调料、可乐型饮料等食品。
