性质：利用微生物代谢生产柠檬酸的技术。现在最常用的菌种是黑曲霉。这一类黑曲霉经过选育得到的菌析，其（顺）乌头酸水合酶和异柠檬酸脱氢酶活性很小，以至糖代谢受阴，积累起柠檬酸。黑曲霉在好氧条件下利用糖质原料生产柠檬酸需氧量大，糖浓度高，培养基中糖浓度要求达14%～22%，对无机离子敏感，特别是锌、铁、镁等离子。柠檬酸发酵也有用念珠菌属的菌利用正烷烃发酵得到柠檬酸的。
