中国优良的黄牛地方品种。体格大，役力强，产肉性能良好，因产于八百里秦川的陕西省关中地区而得名。陕西渭北高原的部分地区和河南的西部及甘肃的庆阳地区也有分布。本品种全身被毛细致光泽，多为紫红色和红色,眼圈及鼻镜为肉色。角短而细致,多向外下或后方稍弯曲。公牛头较大,额宽,颈粗短；鬐甲高而宽。骨骼粗壮,肌肉丰满,体质强健,前躯发育良好,后躯较差。四肢结实,蹄大坚固。母牛头清秀,颈厚薄适中。成年公牛体重平均600千克，母牛380千克(见彩图)。短期肥育后屠宰率50～52％。泌乳期平均7个月,泌乳量约700千克。公牛最大挽力平均为398～475千克，母牛252～281千克。秦川牛曾被输至浙江、安徽等许多省(自治区)，用以改良当地黄牛,其后代的体格和役力均超过当地牛。
