材料与做法:

金鳞鱼整净后用盐擦匀鱼身,置蕉叶上,红葱头、河虾码好,火腿丝撒面,入屉蒸至熟,取出,淋上花生油即可。

师傅教路

传统蒸鱼多用姜葱豉油,但因大头鱼变种的金鳞鱼属西江水库河鲜,肉质好,没泥腥味,故连姜都可不用,以红葱头、油盐水足可带出鱼肉的嫩滑,且更鲜香;用河虾、火腿丝,是为油盐水提鲜。
