【原料】

鸡脑(200克)、火腿(适量)、黄酒(75克)、浓汤(半小碗)、精盐(少许)、菱粉(少许)

【制作过程】

一、将鸡头放入开水内煮约一小时,取出将鸡头剥开,挖出鸡脑放在盘中。二、起猪油锅,加浓汤半小碗和酒、盐烧开,再下鸡脑烩约三四分钟,随即调菱粉下锅勾米汤芡,起锅装在盘中央,三、另用火腿(口蘑、青豆、小菜心、草头等均可)下油锅炒好,镶在四周。
