材料介绍:
花蟹2只,黑胡椒碎2汤匙,大葱碎1汤匙,姜末1汤匙,蒜茸1汤匙,盐1茶匙,黄油2汤匙
菜式典故或创意:
在黄油的浸润下,蟹的肉质之鲜美幼嫩完全释放出来,味美而不腻。
制作方法:
1、花蟹洗净,斩成小件,蟹钳拍碎;
2、中火加热锅中的油,待烧至七成熟时将花蟹放入,大火快速用油炸至变色,然后捞出沥干油分待用。
3、将黄油放入锅中加热融化,再放入大葱碎、蒜茸、姜碎和黑胡椒碎爆香,随后放入炸好的花蟹,调入盐,翻炒片刻即可。
