原料：牛尾400克，大白菜100克，西芹50克，番茄20克，甘笋50克，姜20克。
做法：
1、把牛尾用水略滚一下。
2、起镬下油，爆香姜、甘笋、西芹，然后下牛尾和大白菜、番茄、水，一起煲到牛尾酥软，捞起来，滤却配料，留下汁酱。
3、重新起镬，把牛尾和汁酱倒入，再下味粉调味，勾芡即可。
要点：牛尾是新鲜菜肉市场和超市速冻柜台都有售的，市面买的多是新鲜的本地牛尾，骨多肉少，超市速冻的牛尾选择比较多，其中最贵的巴西牛尾，有如牛扒一样有肉感，“食肉兽”型的人可以考虑，一般挑肉骨各半的纽西兰牛尾就可以了。
姜、西芹可以去牛尾的膻味，大白菜、番茄再把清香灌输，味道蔬果甜浓，开胃且不油腻。
