大白菜叶 10片

四季豆 20条

小黄瓜 5条

南极鲜虾(或溪虾) 1/4杯

(1)盐 2大匙

(2)黑芝麻 1大匙

(3)糖 1/2大匙

白醋 1/4杯

制作:

(1)将材料洗净沥乾备用。

(2)将调味料(1)均匀撒在大白菜叶上,使其软化出水,约4小时後再将渗出的盐水滤除沥乾。

(3)将四季豆及小黄瓜用开水川烫20秒,待颜色变翠绿即可捞起,以冷开水沖凉再沥乾水份,小黄瓜纵切两半再横向切薄片备用。

(4)取一张大白菜叶,铺平後将小黄瓜片1片、四季豆2条与南极鲜虾适量铺放於叶梗处,并将少许黑芝麻平均撒在菜叶上,由叶梗处紧密捲起至整张叶面的1/3部份後,将左右两侧菜叶往中央对折,再继续捲起至尾端固定。

(5)将所有材料依序作好後,浸泡於混合均匀的调味料(3)中腌渍约2~3小时入味即可食用,冷藏约可保存10天。
