豆沙芸豆卷250克,金糕150克,白糖100克,冻粉25克,杏仁200克。
==制作过程】
1.将20克冻粉放入锅中,加250克清水,上火化开,加入50克白糖和少量绿色素,熬10分钟左右,倒在一个1尺2寸的大盘中晾凉。 2.将杏仁(去皮)放入粉碎机中,加入150克清水,磨成杏仁浆。将15克冻粉放入锅中。加入150克清水,上火化开,加入50克白糖,再煮开,晾温后,倒入杏仁浆,搅拌均匀,倒在平盘中,摊成2厘米厚的杏仁冻备用。 3.将切好的芸豆卷在摊好的绿色冻粉冻的大盘中,堆出鱼头和鱼肚的琪状。将金糕切成上短下长的十字形,盖在鱼头和鱼肚上面。在告近鱼肚末端的金糕条上,用刀刻一个三角口,将三角片揭起,插入一块三角形的杏仁冻做鱼鳍。把杏仁冻切成四瓣鱼尾形,码在鱼肚下端。鱼尾上面码几条金糕。用两粒樱桃做鱼眼码在鱼头上面即成。
