每逢春末夏初,梅雨细细,薄雾蒙蒙,来自浅海的凤尾鱼,溯江而上,雌雄群集于瓯江下游的江面上产卵繁殖,这便形成一年一度的瓯江凤尾鱼渔讯。
凤尾鱼营养丰富,肉质醇厚,细嫩鲜美,含有大量蛋白质,脂肪和碳水化合物,还富有猪牛中少有的磷酸。自古就有“雁荡香茗茶山梅,江心寺后凤尾鱼”之誉。
凤尾鱼的食法,不要刮鳞剖肚,只要从中掏出内脏,洗净晾干,放在油锅里一炸,便香酥可口,连骨刺一块嘴嚼,其味无穷。除油炸外,也可红烧、清真、糖醋,其味皆美。如加工熏制成鱼干,作为馈赠亲朋的礼品,若精制成凤尾鱼罐头,更是供不应求。
