【原料】
桂鱼１条，１２５０克净、水发冬菇７５克、火腿７５克、鸡蛋２只、肉丝４０克、麻油少许、姜丝少许、味精少许、笋５０克、胡椒少许、葱丝少许、黄酒少许、萝卜少许、菱粉少许、白糖少许、精盐少许、酱油少许
【制作过程】
一．将桂鱼的肉拆下，头尾留好。鱼肉切成２０块枣块（零 零碎边角留下）、用味精、盐、糖、胡椒拌和腌一下。二．将冬菇、火腿、笋切成小花片（冬菇、火腿各留下一半切成丝留着）、然后１块鱼、１片火腿、１处冬菇、１片笋片，依次在盆内装成像鱼身一样，放入笼内蒸十五分钟。三．将鸡蛋打碎，去掉蛋白，用菱粉与蛋黄拌成糊状，涂在鱼的头尾上，放入生油锅内氽一下。再将肉丝、冬菇丝、葱姜丝加酱油、糖、味精红烧后，放在鱼头上做麒麟须。四．将蒸好的鱼身装在头尾中间，再用鸡汤加些糖、味精、盐、黄酒、麻油、菱粉烧成沙司，浇在鱼身上即好（不要浇头尾）。五、鱼头上用萝卜雕成麒麟角装在鱼头上，鱼四周用一些有色彩的原料围边（用料的品种可根据自己的喜爱决定）。
