一般的家常便饭只讲究些营养、味道就足够了，其实，很普通的菜肴，如果讲究一下菜的颜色搭配、餐具使用和摆放样式等，菜的品位和档次马上就提高了，你的自信和兴趣也随着增加，当然，这还是一种享受。一般的规律是：
1．一般的炒、爆菜盛盘时，用铲勺将形大的或主料拉入盘里，细小的料放在盘底，形大的或主料在上层，突出了主料。
2．质嫩易碎的勾芡菜，如熘菜成盘时，要先从盘的一端倒起，就势向另一端移动，锅移到另一端时，菜肴正好全部倒进去。做时要速度快，准确。
3．对于汁稠、粘性大的菜，如酱爆肉丁，要先盛一部分入盘，再把锅里其余的盛入勺中，盖在盘中的那部分上，并用劲向下按按，这样盛入盘中的菜圆圆的，显得很饱满。
4．块大的如整鸡、整鱼，为了盛入盘中还保持整体形，盛的时候。将锅端在盘子上面，向前倾斜，一面用勺拖住鱼或鸡的前部，一面抬高锅的倾斜度向下倒，这样把整鸡或整鱼完整地盛到盘内。
总之，无论哪一种盛入方法，都要注意美观，突出主料，使盛好的每盘菜都有“丰满”感。
