原料：
蹄膀1只（约1500克），菜心，酱油、糖、味精各适量。
做法：
1∶蹄膀洗净，放入汤锅煮熟，取出趁热投入7至8成热的油锅爆油，取出后放冷水中浸泡至肉皮起泡待用，菜心焯水后用在盆的外围。
2：锅中放入踢膀及原汤，加入酱油、糖、烧开后转小火烧酥后加味精，转大火收汁至稠，放入菜心中即成。
tips：
蹄膀先烧酥后炸，再加料烧，可使里外一致，并且酥而不烂。
蹄膀胶原蛋白质比较丰富，肉皮经油炸后产生，诸如气泡烹制后便于入味。
特色：
色深、味浓、咸中带甜，肥而不腻。
