景谷傣族牛撒撇
在景谷县傣族地区，有一道傣家入用来宴请宾客的世传名菜，称之为“牛撒撇”。它的烹制方法比较特别，逢年过节或办喜事时，要杀牛，把黄牛宰杀后，取出牛的脊肉用火把它烤黄，再切成细肉丝，拌以煮熟后的牛肚杂，放上姜、蒜、辣子、花生香碎面等香料和佐科，再用煮沸后经过过滤的牛粉肠水或胆汁拌匀，即可食用。‘牛撒撇”最关键的配料就是那牛粉肠水。城里人想吃“牛撒撇”没有牛粉肠水，就用五加叶来替代搅拌，味道口感相似。“牛撒撇”的特点是细腻可口，香味淳正，色泽诱人，具有健胃、消燥热、增食欲的功能，受人喜爱。
