原料:活石魬鱼,红油,生姜,香葱,大蒜籽,精盐,味精,鲜红辣椒,料酒.

制法:(1)红辣椒,大蒜,生姜切丝,香葱切段.

(2)油锅烧热,用少量油遍淋锅底,将鱼摆在锅中,小火煎至鱼两面呈金黄色时,撒上姜,蒜丝,烹入料酒,清水稍煨1分钟,待鱼熟透放味精,改用大火收汤,添入红油,放入葱段出锅装盘即可.

特点:形状完美,色泽红亮,软嫩鲜香.
