补充资料：鳝鱼炒玉兰
【用料】：鳝鱼500克，水发玉兰片。葱段5克，姜片3克，蒜瓣5克，绍酒10克，白糖5克，酱油8克，醋5克，精盐3克，味精1克，花生油100克。
【制法】：
①将鳝鱼摔昏，用锥子将鳝鱼钉在长条木板上，左手理直鳝鱼，右手持厚背小刀从颔下切井。从骨边下刀，划至鳝尾，脊骨与鳝肉即分离，用小刀将鳝鱼切成4厘米长的片段。将玉兰片切成4厘米长二厘米宽、0．3厘米厚的片。
②炒锅置于火上，放入花生油烧至六成热。将鳝鱼片偏炒。表面略焦，倒入漏勺沥油。
③炒锅放入花生油，烧至六成热，下玉兰片略炸一下再放入鳝鱼片。葱段，烹绍酒，下酱油、醋，合炒。然后放清汤，5分钟后放入味精，用湿淀粉勾芡，淋芝麻油即可。
【作用】：补中益气，温补肾阳。鳝鱼中含有黄鳝鱼素a和b。具有显著降血糖作用。实验证实黄鳝鱼素对正常血糖无明显影响、但对高血糖有类似胰岛素作用，故有调节血糖作用。
