砂锅海虾粥
主材料：新鲜海虾、独特配料、大米。
配料：姜丝、芹菜粒、冬菇丝、炸蒜茸、炸方鱼、炸葱油、鱼露和天津冬菜。
做法：先制作配料，然后用砂锅明火煲出一锅白粥，待粥有胶质的时候，即已经七成熟的时候，放入海虾以及独特配料，再煲煮5-6分钟即可。
要点：主要是能配齐配料。配料中炸蒜茸、炸葱油、炸方鱼都要在煮粥前自行制作，蒜头、葱、方鱼(也叫“大地鱼”)切粒油炸，葱油要把炸锅的葱和油都保留起来。在家最难找到的是鱼露，这是潮州地区的特产，要用新鲜的鱼滤出鱼油、煮制，要在家庭制作有困难。师傅建议用一般的食盐代替。
