【特点】 干蒸精制,金黄油亮,肉香扑鼻,十分诱人。原计原昧,鲜香脆爽,滑嫩不腻

【原料】

河田鸡1只(以当年生未下蛋的鸡媛为最佳,重纳1.25公斤,公鸡重约1.5公斤至1.7公斤),葱白、嫩姜各2克,香油、精盐、鸡油适量。

【制作过程】

将生鸡宰杀,放血去净毛,冲洗干净,于腹部后端从肛门处起开一小口,取净内脏.彻底洗净血污。 取精盐少许擦遍鸡全身表里(护皮勿破),脆一小时、使其入味。 葱白、嫩姜及精盐少许,共剁为汁(也可熬成油姜葱计),装碟备用。将整鸡置盆内加盖,上冷水蒸锅密封,囱常温到沸点、干蒸约1个小时(以鸡翅紧贴身,筷子能一戳而过,鸡皮尚未破裂为传),取出风凉,斩成鸡块,整齐装盘。原蒸盘中之鸡原汁(干蒸鸡)10毫升.加入搞好的油姜葱汁薄浇在装好的鸡抉上,即可上席。
